Lola’s Kitchen: Japanese Curry Recipe

These posts can be recipe posts, tens list posts about food or recipes or more discussion type posts about food. I love cooking and spend some time in the kitchen almost every day, so I wanted to give it a place on my blog as well. The banner for this feature is designed by Michelle from Limabean Designs.

When my sister still lived here, she regulary cooked japanese curry. We all liked the dish, but once she moved out I didn’t try make it myself. Until one day when I was craving japanese curry and decided to make it from scratch. You could all read how that attempt ended in my Cooking Disasters post. So I decided to just buy a package and give it another try, this time it turned out great. I made a few tweaks of my own to the recipe, so today I can finally share the recipe with you. Japanese curry tastes different than indian curries, but it still feels like a curry as well. If you have a toko or asian supermarkt close by you can buy japanese curry paste there. I usually buy the golden curry brand and the medium hot or mild variety as else it’s too spicy for me.

Ingredients

Japanese Curry Ingredients

  • Potatoes – 4 big ones
  • Carrot – 3 large carrots
  • Onion – 2
  • Japanese Curry Paste – about 1 package, 5 blocks or 100 gram
  • Apple – 1 (optional)
  • Soy Sauce – 2 tablespoon
  • Chicken or vegeterian meat substistuion – 500 gram or one package
  • Water – 1 liter/ 4 cups
  • Garlic – 4 cloves
  • Ginger powder – 1/2 teaspoon (optional)
  • Olive Oil
  • Honey – 1 tablespoon (optional)

This recipe makes japanese curry for about 4-5 people. You can serve it with rice.

Method

  1. Slice and dice the onion and garlic. Then peel, slice and dice the carrots and the potatoes as well. If using chicken make sure to cut that in small sqaures.
  2. Now heat some oil in a wok or pan, add the onion and garlic and bake until the onion is translucent.
  3. Add the carrots and the water and cook for about 5 minutes. If using chicken add that as well. While the carrot is cooking peel, core and rasp the apple.
  4. Then add the potatoes and apple and cook for another 15 minutes.
  5. Now add the curry paste, soy sauce and ginger. If using vegetarian meat substitution add that as well. If serving with rice start boiling your rice now. Cook your curry for another 10 minutes while stirring.
  6. You can now eat your curry

Variation Tips

  • Salty Japanese Curry. If you like your curry a bit salty, you have some options. Either add a half till one bouillon cube or instead of a liter water use a liter vegetable or chicken broth. You can also add some extra soy sauce to taste.
  • More Apples. I’ve seen some recipes that add two apples instead of one.
  • Vary with veggies. You can add some other veggies if you like.

  1. Yay! JAPANESE CURRY IS MY FAVORITE!! Last week, I ate it four days in a row. Lol. I really like to cut my vegetables in big chunks for Japanese curry, and I make mine in the pressure cooker so everything cooks up quickly. I also add some honey and ketchup to mine (my secret ingredients). I get a euphoric high from eating this stuff. Mmmmm.

    • I don’t have a pressure cooker, so I just throw everything in the wok with water and wait a long time. The recipe I used also used ketchup and honey, but I left it out as it sounded like a weird ingredient to add to curry, but now I am thinking there might be a reaosn they add it. Maybe I’ll try it next time. I usually make enough so we can eat it two days in a row, it’s so good!

    • I don’t think japanese curry is as common as other curries, so I don’t think it’s weird you never heard of it. My sister is a big fan of everything japanese so one day she decided to make this and that’s how she introduced me to this dish.

      It’s really good! It tastes different from other curries, but at the same time, stil has a bit of that curry feel. I hope they sell it at your international market store! The golden curry brand is the brand I usually use and it’s great.

  3. I’ve seen Quorn but never that package before. Is it supposed to be the equivalent of chicken pieces? Is there a different substitute for it that I could use? perhaps Chickpeas? I LOVE currys but mine are usually an Indian curry. I don’t think I’ve ever had a Japanese curry before. I love the use of the apple. I really need to give this recipe a try… once it cools down here again. πŸ˜‰

    • I do live in the Netherlands, so it’s possible the packaging is different here. It is basically the vegetarian version of chicken pieces indeed. You could try tofu or chickpeas instead, I haven’t tried that myself so not sure how good it will work. Or you can just skip it altogether, I tried that and it tastes great without any vegetarian meat substitution as well.

      I mostly eat Indian curries as well, but I really like Japanese curry too as it’s a bit different. I hope you’ll give it a try!

    • You can make the curry paste yourself, but I tried it once and it was a failure, so I stick with the pre-bought curry paste now. I hope your grocery store sells it. My grocery store doesn’t sell it, so I usually order it online from an Asian supermarket.

      The apples really make a good addition to the dish, you don’t even notice them at the end, but they do add something to the taste.
