Lola’s Kitchen: Wraps with Curry Sauce and Rice Recipe

I like wraps, they are yummy and you can fill them with almost anything. I often combine it with other recipes, like wraps with Indian Cauliflower mash or Tomato pasta Sauce. This recipe is an original lola recipe, which means I didn’t base it on a recipe I found somewhere, but came up with the idea myself. I wanted a curry flavoured sauce once and decided to combine it with wraps. I made it a few times and later added the rice after seeing a wrap recipe with rice on a food blog I follow (I think it was Vegan Richa her blog). I think the rice really adds something to these wraps and after that tweak decided it was finally ready for my blog.

Ingredients

  • Red Bell Pepper – 2
  • Green Beans – 500 gram/ 3 cups
  • Vegetarian Minced Meat – 175 fram/ 1 1/2 cup
  • Onion – 1
  • Bouillon Cubes – 3
  • Rice – 1 1/2 cup
  • Wraps – 8
  • Curry Powder – 3 1/2 tablespoons
  • Masala – 2 tablespoon
  • Cumin – 2 teaspoon
  • Cayenne Pepper – 1/2 teaspoon
  • Water
  • Olive Oil
  • Cornstarch – 4 teaspoons
  • Garlic – 4 cloves(optional)

This recipe feeds about 4 people (2 wraps each) or you can eat it for two days with two people. And yes I forgot a few ingredients on the picture, oops.

Method

  1. Cut the onion, red bell peppers and green beans in small pieces.
  2. In a wok heat the oil and bake the onion until it’s translucent.
  3. Then add the green beans, red bell pepper, 3 cups of water and the spices (cayenne pepper, curry powder, masala, cumin and 2 bouillon cubes). Let it cook for 20 minutes.
  4. After that boil the water for the rice, add a bouillon cube to the pan with rice and water and cook the rice for 10 minutes.
  5. In the meantime add the vegetarian minced meat, stir well. Mix some cornstarch with water and add that to the sauce. Make sure the sauce is pretty thick, that way it won’t drip from the wraps as easily.
  6. Drain the rice once it’s done. And set aside.
  7. Heat a pan and warm the wraps. Once the wrap is warm lie it on a plate and add about 2 tablespoons rice. Put the rice in the middle fo the wrap ina thin line, make sure to leave some space from the edges. Then add 2 or 3 tablespoons sauce on top. Fold the bottom of the wrap inwards and then roll the sides inside.
  8. Enjoy your wraps!

Variation Tips

  • vary with veggies. I like to use red bell peppers and green beans for this recipe, but also tried corn, lentils and green peas. Other ideas are to use mushrooms, other colours bell pepper or nay other veggie you like.
  • Wraps with Curry Sauce, meat and Rice. If you’re not a vegetarian you can use either small cubes of chicken or minced meat to this recipe. You can bake the minced meat beforehand and add it at the same step you normally would add the vegetarian. If you use chicken you might want to cook it beforehand and add it halfway through while the green beans and bell peppers are cooking or marinate them and bake and add them while assembling the wraps.
  • Wraps with Curry Sauce and Orzo. Instead of rice, you can also serve these with orzo.
  • Wraps with Curry Sauce. I like adding the rice, but you can also eat these without rice.

    • I am really boring when it comes to breakfast and just eat the same every morning, but breakfast burritos sound really good. I never thought to put scrambled eggs in tortillas, that’s a good idea! I’ll have to give that a try once, maybe for lunch!

    • Yes it would work as lunch too, although we usually don’t have leftovers for lunch as I cook enough for two days. I really like the combination of curry and wraps and the rice ads a nice touch too.

    • Usually I tweak recipes I find online, but it’s fun to create a recipe from scratch now and then, but it’s difficult as well. I really like this recipe, will have to make it again soon.

    • Let me know if you give it a try, would love to hear what you think of this one! And wraps are so good, I made lunch wraps for my boyfriend a few times and they are so easy and fun to make. Either with leftovers from the day before or with ham and cheese.
      Although for some reason I never thought of eating eggs with wraps, I really want to give that a try now.

    • Wraps are so good! Most of the recipes I post on my blog are without meat, although I do add an option for meat with every post for the meat eaters. I think I have about 4 curry recipes on here now, I love making curries. Pinterest is a great place to find new recipes, that’s where I get most of my inspiration.
