Lola’s Kitchen: Vegetarian Pie Recipe

I found this recipe in the Allerhande, which is a monthly magazine from the supermarket where I do most of my grocery shopping. The name of the recipe caught my attention as it was a vegatarian recipe and it sounded yummy, so I gave it a try. It’s a bit like Shepherd’s pie, but the sauce is a bit different and instead of mashed potatoes it has cooked sweet potatoes on top. It takes some time to prepare, but it’s really good. I tweaked the sauce a bit, so it has more flavour.

Ingredients

  • Sweet potatoes – 3-4
  • Red Bell Pepper – 2
  • Carrots – 2 big ones
  • Celery – 2 stalks
  • Onion – 1
  • Garlic – 4
  • Vegetarian Minced meat – one package or about 300-400 gram
  • Water – 0,5 liter/ 2 cups
  • Bouillon cubes – 2
  • Thyme – 3 teaspoons
  • Paprika powder – 3 teaspoons/li>
  • Cayenne Pepper – 1 teaspoon
  • Onion powder – 1 teaspoon
  • Cinnamon powder – 1 teaspoon
  • Ajowan – 3/4 teaspoon
  • Olive Oil
  • Cornstarch – around 4 teaspoons (optional)

Method

  1. Peel the sweet potatoes (optional). Then slice then in small slices and cook the for about 10-15 minutes.
  2. In the meantime slice and dice the other veggies, the onion, garlic, carrots, celery and red bell pepper. Bake the onion and garlic in a big wok until the onion is translucent.
  3. Then add the rest of the veggies. Preheath the oven now to 200 degrees celcius/ 392 degrees fahrenheit.
  4. In a small bowl combine the spices, bouillon cubes, cinnamon, paprika, ajowan, thyme, onion and cayenne pepper. Then add the water and the spices to the wok and stir well.
  5. Let the veggies cook for about 10 minutes. Preheath the oven at 200 degrees celcius/ 392 degrees fahrenheit. Once the veggies are almost done add the vegetarian minced meat. And the cornstarch mixed with some water (optional).
  6. Once the veggies and sweet potatoes are cooked long enough, remove them from the fire. In a big oven proof bowl pour the sauce. Then carefully put the sweet potatoes on top of it.
  7. Put it in the oven for about 10 minutes, then remove the bowl from the oven and enjoy your Vega Pie.

Variation Tips

  • Meaty Pie. Instead of making a vega version you can ofcourse add real minced meat instead.
  • Vega Pie with normal potatoes. Instead of sweet potatoes you can also use normal potatoes.
  • Vega Pie with mashed potatoes. Instead of cooking the potatoes you can also mash them afterwards and put them on top.
  • Vega Pie with cheese on top. Like in the original recipe you can put some cheddar cheese on top of the potatoes before putting the dish in the oven.

  1. I love celery from soups to stew. I sometimes addit just for flavor and not as a main ingredient.

    This dish sounds easy and full of veggies, my kind of food although I’ll be using meat on mine for sure lol

    • I haven’t tried many dishes with celery so far, I am always a bit hesistant to add it as I don’t know in which dishes it suits well and I don’t like celery raw, but I do like it in this dish. I always add a variety tip for meat as I know some people prefer meat in their dishes.

  2. For some reason I don’t think my first reply went through.

    That looks really good but I don’t care for sweet potatoes so I would have to use something else. I love using celery in dishes and roasting celery is a favorite of mine. My mom used to put peanut butter of celery and give it to use kids as a snack and it’s really good.

    • You can use normal potatoes instead of sweet ones or add something else on top that you like. I haven’t heard of roasted celery before, it does sound good. My boyfriend sometimes eats celery with hummus as snack. I don’t like raw celery too much as it’s too strong for me, but I like it in a dish like this.

    • I quite like sweet potatoes, although I don’t eat them frequently and they only work in certain dishes I think. Or sprinkled with some olive oil and baked in the oven, that’s how I first ate them. You can always skip the sweet potatoes or add normal potatoes.

    • Our supermarkt has a monthly magazine with recipes and some are really good. I don’t make them too often, but I am glad I gave this recipe a try. And it was a ncie way to eat sweet potatoes. I haven’t tried turkey stuffing so far, although I have found a vegetarian stuffing recipe once.

  3. This looks pretty good! I’m not a huge fan of sweet potato (I find it too…sweet?) but I would definitely try it with regular potato ๐Ÿ™‚

    I love celery, I will eat it by itself, or with peanut butter, in salads, in stir fry, quiche (well, my Mum’s version of quiche!) and stew.

    • I am pretty sure it will taste great with regular potatoes as well :). I don’t like celery raw, but I do like it in dishes like this one.

  4. Yum! I’ve never put celery in my shepherds pie but I use it in soups all the time. That’s the most common use for me if it’s cooked. I do like it raw though in “ants on a log” form which we get as kids a lot. You fill the inner well with peanut butter then put the “ants” which are raisins along the “log” of peanut butter. lol I still make it now and again as a comfort food.

    I’ve never seen doing sliced sweet potatoes on top like that. It looks interesting! I might have to try that next time ๐Ÿ˜€

    • Oh celery in soup, that sounds like a good idea! I saw a few others mention celery with peanut butter, never heard of that before until now.

      The slices of sweet potatoes on top are a nice addition, although they do slide off a bit when you scoop up some on your plate.
