Lola’s Kitchen: Teriyaki Mushrooms and Chicken Recipe

Lola’s Kitchen is a feature on Lola’s Reviews where I talk about all things related to food, cooking and baking. I love cooking and spend some time in the kitchen almost every day, so I wanted to give it a place on my blog as well. The banner for this feature is designed by Michelle from Limabean Designs.

I don’t like champions, but my boyfriend likes them, so sometimes I make this dish for him so he cane at some of them. I figured I would share it with you. It’s a slightly salty sauce made with mushrooms, chicken and onion. It’s quite easy to make and doesn’t require many ingredients.

Teriyaki-Champignons-with-chicken

Ingredients

  • Mushrooms – 250 gram/ 1 box
  • Chicken – 200 gram
  • Teriyaki sauce – 2-3 tablespoons
  • Onion – 1
  • Olive oil

This feeds about 2 people.

Method

  1. First cut the onion in small pieces. Put in the wok and start baking it until translucent.
  2. In the meantime slice the chicken in small pieces and once the onion is translucent add to the wok.
  3. Bake the chicken for about 10 minutes while in the meantime you slice the champions. I usually slice each champion is about 6 pieces.
  4. Add the champions to the wok and add the teriyaki sauce. Bake for a few minutes.
  5. You can serve with rice or eat plain.

    • Thanks for catching that, I now changed that to mushroom. I can’t believe I didn’t spotted my mistake until the post went live. Champignon is the dutch word for mushroom :).

    • Thanks for catching that, that was a mistake on my part. I changed it to mushrooms now. Champignons is what we call them in dutch. I don’t like mushrooms, but my boyfriend does. I hope it’s a good dish for those who like mushrooms :).

    • I sadly don’t like the taste of mushrooms. It does seem like a good combination with chicken and rice and it’s so easy to just add one sauce and have a nice dish.

    • Thanks! I hope you give it a try. I think most types of mushrooms would work for this dish. I use something we call “kastanje champignons”, which translated directly to chestnuts mushrooms. Not sure if that’s correct, they have a brown top and slightly nutty flavor according to the internet. Someone else mentioned white bottom mushrooms, those would work too.
