Lola’s Kitchen: Spinach Masala Quiche Recipe

This is another original Lola recipe. I wanted to make quiche and I wnated to eat spinach, throw in some new masal spices I recently got and you get this quiche. It is one of the few recipes withotu red bell pepper, want to know why? I hand’t bought enough red bell pepper to add it to this dish as well. So I looked into my pantry and saw some lentils and added those instead. I get a tigne of sadness every time I think about this quiche as I made it the first time the day Pita had died. But it is a wonderfull quiche, filled with curry flavour and veggies. And I have a soft spot for quiches as I love dough in general.

Ingredients

Spinach Masala Quiche Ingredients

  • (Frozen) Spinach – 2 cups
  • Lentils – 2 cups
  • Onion – 1
  • Quiche dough – 6 pieces or enough to cover your bowl
  • Water – 125 ml/ 1/2 cup
  • Greek Yoghurt – 125 ml/ 1/2 cup
  • Egg – 3
  • Low Salt Vegetable Bouillon Cube – 1
  • Masala – 3 teasoons
  • Curry powder – 2 teaspoons
  • Turmeric – 1 teaspoon
  • Olive Oil

Make sure to use Masala and not garam masala as they taste very differently. The masala I use is bright yellow and tastes more like curry, while garam masala is much brown. I usually use frozen quiche dough, but any other quiche dough or homemade quiche dough works as well. I am just lazy and I haven’t foudn a good quiche dough recipe yet. This recipe feeds about 3-4 people.

Method

  1. Preheat the oven to 180 degrees celcius/ 356 fahrenheit. Remove the quiche dough from the freezer and put them on the counter to thaw.
  2. Slice and dice the onion.
  3. Then heat the oil and bake the onion until the onion is translucent.
  4. Now add the spinach and the water and stir well.
  5. Once the spinach is mostly defrosted add the lentils, followed by the spices. Stir well and let cook for a little while.
  6. In the meantime prepare the bakign dish and lightly grease it. Then put the quiche dough inside, make sure to cover the whole surface.
  7. In a mixing bowl combine the greek yoghurt and eggs and stir well.
  8. Now it’s time to assemble the quiche. Pour the spinach mixture in the dish. Then pour the gg mixture on top and stir a bit.
  9. Put in the oven for 20-30 minutes. Then get the quiche out, let it cool down for a bit and enjoy!

Spinach Masala Quiche

Variation Tips

  • Vary with veggies. While I use spinach and lentils, you can basically add in whatever veggies you have.
  • Normal vegetable quiche. Leave out the masala, turmeric and curry spices and you have a more neutral flavoured quiche. Or add in some soy sauce or ketjap for flavour.

      • Thats true, I could give that a try:) I have no idea what flax is either, I think it’s a type of seed or grain people use. Not entirely sure!

        • I only know of flax thanks to that vegan blog, but beside the fact that you can substitute eggs with it I have no idea what it is or how it looks like.

    • The storebrought ones here are often circle-ish indeed. My sister had a big round quiche form, but as I don’t have it, I always make quiche in my brownie form. I don’t make quiche often enough to buy a seperate form for it. I really like quiche, although I don’t make it that often.

    • I really like quiche’s as well, although I don’t make them that often. There are lots of veggies so that’s healthy ;).

    • I’ve heard of using cresent rolls for quiche as well, but never tried it. My sister once made a salmon quiche with cresent rolls that turned out well, she said, I don’t like salmon so haven’t tried it myself. I usually use frozen quiche dough or puff pastry. Both gives a very different flavour. I just pick what I want at that time.
