Lola’s Kitchen: Chicken with Parsley and Mushrooms Recipe

I love cooking and spend some time in the kitchen almost every day, so I wanted to give it a place on my blog as well. The banner for this feature is designed by Michelle from Limabean Designs.

The inspiration for this recipe was a video recipe posted by Townsends, it’s a great channel about American history and food. And this recipe sounded promising so I made it for my boyfriend. Instead of chicken wings I used chicken breasts. This dish smelled and tasted (according to my boyfriend) quite different than what we normally eat. The parsley really gives it’s flavor to the dish and the salt and pepper also shines. It is quite easy to make as well.

Ingredients

  • Chicken – about 200 gram/ 1 large chicken breast or some chicken wings if you prefer that
  • Spring onion – 3-5
  • Crimini mushrooms – 400 gram
  • Parsley – a bundle of twigs / 15gram
  • Salt – 1 teaspoon
  • Pepper – 1 teaspoon freshly ground
  • Lemon – a few squeezes of half a lemon
  • Olive oil (or your favorite vegetable oil)

This is enough for about 3 portions.

Method

  1. First pour some oil into a large bowl, add the salt and pepper and stir.
  2. Then slice and dice the chicken in bite sized cubes. Add them to the bowl and stir.
  3. Then cut the spring onion in rings and add them to the bowl. Slice the parsley in smaller pieces and add that as well.
  4. Then scrub and wash the mushroom and slice them in bite sized chunks. Add that to the bowl as well and stir well. Add some more salt and pepper to taste.
  5. Now cover the bowl and let it marinate for about 1.5 to 2 hours.
  6. After that time heat some oil in a wok or pan, add the mixture in the bowl and bake for about 10-15 minutes while regularly stirring.
  7. After that it’s ready and you can eat the dish now.
