Lola’s Kitchen: Cake with Cinnamon Swirls Recipe

This is a recipe I found on pinterest, it looked like a quick to prepare and yummy cake or bread as you in the US usually call it and I had to give it a try. It turned out really good. The cake is soft and fluffy and the cinnamon adds something extra to the cake. The oven smelled delicious when I opened it to check on the cake. Definitely worth a try if you like cinnamon.
This recipe is based on Lil’ Luna her Cinnamon Sugar Quick Bread Recipe.

Ingredients

  • Flour – 2 cups/ 250 gram
  • Sugar for the cake – 160 gram/ 4/5 cup
  • Sugar for the swirls – 50 gram/ 1/4 cup
  • Cinnamon – 2 tablespoons and 1 teaspoon
  • Salt – 1/2 teaspoon or a pinch
  • Milk or buttermilk – 1 cup/ 250 ml
  • Olive Oil – 1/4 cup/ 62 ml
  • Egg – 1
  • Baking Soda – 1 teaspoon

Method

  1. Preheat the oven to 350 degrees Fahrenheit/ 175 degrees Celsius.
  2. In a small bowl combine the cinnamon and the sugar for the swirls. Stir well and set aside.
  3. In a big bowl combine the egg, milk and the olive oil and mix for a bit. Then add the salt, flour, sugar and baking soda and mix until well combined.
  4. Put some baking paper in an oven proof bowl or load pan. Scoop half of the cake mixture inside. Then cover it with about half of the cinnamon mixture. Put the rest of the cake mixture on top and then the rest of the cinnamon mixture on top of that. With a spoon or other kitchen utensil mix through the batter to stir the cinnamon through the cake mixture which will create the swirls.
  5. bake the cake for 45-50 minutes if using a loaf pan and for 30-35 if using a flat oven proof bowl like I did.
  6. Let the cake cool down a bit, then move to a wire rack to cool down further. Enjoy your cake!

Variation Tips

  • Cake with cinnamon cake. In stead of creating swirls, divide the batter in two and mix the cinnamon mixture through on half of the mixture. Put the plain cake mixture in the form first and then add the cinnamon half. With a spoon or knife combine a bit.
  • Add chocolate chips. Add a cup of chocolate chips to the cake mixture before baking it.
  • Cake with Cacao swirls. Replace the cinnamon with cacao powder instead.

  1. I love Cinnamon – even more so after knowing all its health benefits! Thanks for the recipe Lola, I think I should give this a try. I love everything cinnamon, from adding into milk to cinnamon rolls and cakes, this ingredient literally spices up any food!

    • Cinnamon tastes great! I wasn’t even aware it had so many health benefit. I agree it really spices up any food and can be added to so many different things. It really gave a good twist to this cake. let me know if you give it a try!

    • I thought it was a bit weird at first using olive oil, but it turned out great! I hope you give this one a try! And I like that it has ingredients you usually have at home, so you can make it whenever you want to. I usually prefer plain cakes/ breads, but I am sure with a glaze it would be great too!

    • Nope I haven’t tried that one myself, but I figured the combination of chocolate and cinnamon would work pretty well so I added it as a variation tip :). I hope to give that a try once.

    • I hope you’ll like it if you decide to give it a try! I also love cinnamon and more than doubled the amount of cinnamon compared the recipe I based this one.

    • It really is pretty simple and most of the ingredients are ones you usually have at home already. I’ll have to try this one with chocolate chips too.
