Lola’s Kitchen: Oat Bars Recipe

Lola’s Kitchen is a feature on Lola’s Reviews where I talk about all things related to food, cooking and baking. These usually are recipe posts or more discussion type posts about food. I love cooking and spend some time in the kitchen almost every day, so I wanted to give it a place on my blog as well. The banner for this feature is designed by Michelle from Limabean Designs.

I stumbled upon this recipe one day on Pinterest and it sounded so easy and yummy I made it like the next day or so. And they turned out to be exactly that, easy to make with only a few ingredients and they taste great. These are hearty and filling oat bars. They look festive with the chocolate on top and it adds a nice variety of flavor.

This recipe is based on Lazy Cat Kitchen’s Healthier Vegan Flapjacks recipe

Ingredients

  • Peanut butter – 120 gram/ 1/2 cup
  • Map syrup – 160 ml/ 2/3 cup
  • Banana – 1 large one
  • Baking soda – 1/4 teaspoon
  • Salt – 1/4 teaspoon
  • Rolled oats – 350 gram/ 3 1/2 cup
  • Chocolate – 90 gram / 1/2 cup (optional)

Method

  1. First preheat the oven to 170 degrees Celsius / 340 degrees Fahrenheit.
  2. In a medium to large bowl combine the peanut butter with the maple syrup. Stir with a spoon or whisk till well combined.
  3. Mash the banana with a fork and then add to the mixture, stir well to combine.
  4. Then add the baking soda and salt and give it another stir.
  5. Now add the oats and stir till combined. Then scoop the mixture into a baking dish. With the bottom of the spoon press on the mixture till it’s all evenly distributed and as pressed together as you can get it.
  6. Bake it for about 30 minutes or until the sides begin to turn golden brown. Remove from the oven and let cool.
  7. When cooled down, melt the chocolate. I melt mine in the microwave every time 30 seconds then stir and repeat till it’s molten. Then with a spoon drizzle the chocolate over the top of the oat bars. Now let the chocolate dry and then you can cut it into bars.
