Lola’s Kitchen: Mini Applecake Recipe

I got this recipe from my boyfriend his mother. Not sure where she found it, in a magazine or cook magazine I think. Once when my boyfriend ahd visited his parents he came back with a piece of applecake for us. We ate it and I thought it was really good. Then at christmas I got a small springform from my boyfriend his parents and his mom told me she made the applecake in that sized springform. So I asked for the recipe and made it myself. This cake is enough for2- 4 person. When you’re craving something sweet this cake is easy to make and you can eat it all in one evening.

Ingredients

Mini Applecake Ingredients

  • Flour – 100 gram/ 13 tablespoons
  • Sugar – 85 gram/ 7 tablespoons
  • Butter – 50 gram/ 3 1/2 tablespoons
  • Baking Powder – 1/2 teaspoon
  • Egg – 1
  • Apple – 1
  • Apricot Jam – 2 tablespoons
  • Cinnamon – 1/2 teaspoon
  • Milk – 2 tablespoons

Sorry for the weird measurements, as it was an originally dutch recipe the conversion leads to weird measurments in the US system. You need a sprinform of 15 centimeters/ 6 inches for this recipes. If your sprinform is a bit bigger that works too, just be aware that your cake will be flatter in that case. You can double the measurements if your springform is a lot bigger than that.

Method

  1. Preheat the oven to 200 degrees celcius/ 392 degrees fahrenheit.
  2. In a medium sized bowl combine the butter, sugar, flour, baking powder, egg and milk. You can melt the butter first or let it warm till room temperature. With a mixer, mix well until combined.
  3. Put baking paper on the bottom of the springform and grease the sides with a little bit of butter.
  4. Pour the cake batter into the springform.
  5. Peel the apple and slice it in four. Then slice each piece into thin slices. Put the slices in the cake with the round side up, see picture.
  6. Now put the cake in the oven for 20-30 minutes.
  7. In the meantime combine the apricot jam and cinnamon in a small bowl.
  8. After the cake has been in the oven for 20-30 minutes, it should be golden brown on top. Test with a cake tester if the cake is dry and if not let it bake for another 5 minutes. Once it’s dry remove it from the oven and put the apricot jam and cinnamon mixture on top. Then put it back in the oven for 5 minutes.
  9. Remove the cake from the oven and let it cool down. Slice the cake in four pieces and enjoy!

Variation Tips

  • Mini cake with apple pieces. Don’t like slices? Cut the apple in tiny pieces and stri it through the batter before putting the cake in the oven.
  • Mini Fruit cake. Instead of apple use apricots or any other fruit to choice.
  • Mini Cinnamon Apple Cake. Add a bit of cinnamon through the cake batter.
  • Mini Apple Cake with other flavour jam. While I think the apricot jam works really well with this recipe, you can also skip the jam or use another jam flavour. Or go for different fruit and a matchign jam for that and you can vary a lot with this recipe.

  1. Oh this looks similar to a large apple cake I’ve made a few times, but it’s an upside down cake and has an almost caramel on the bottom that turns into a jam like consistency. I have a springform pan this size, it’s so handy when doing small batches. I’ll have to give this one a go!

        I tweaked the caramel section as I had issues with it not melting properly and then re-crystallising which was a nightmare; I use 1/4 cup of water, like a regular caramel, instead of 2 tbsp. And I do not stir it! I let it sit and swirl the pan gently as it starts to colour (and use a pastry brush dipped in water to stop the sugar sticking to the sides). I didn’t let it colour too much, just a nice golden colour as I didn’t want it to set into candy. I also needed 1 to 1.5 apples and not 4, I guess I get large apples (I found granny smith ones to be best because they’re not sweet).

    • I hope you’ll give it a try! It’s really good and pretty quick to make too. It’s handy to have a springform pan, although I don’t use mine as much, they sure come in handy.

  2. Yum, this does look good! I like anything that’s got cinnamon and apple in it. I’ve never had apricot jam, but I’d try it, or I could replace it with something else. I feel like this would probably also be good served warm with some ice cream. I don’t really have a go-to thing per se, but I’m usually a cookie or brownie person when I bake. And it’s usually from a box lol because that’s just easier.

    • I don’t think I ever have tried apricot jam before this cake either, but I like it on this cake. You could probably make it without the jam too or use another jam or something else you like on top.
      Oh I love cookies and brownies. I haven’t made brownies in a while, maybe I’ll make soem this weekend. Brownies aren’t that difficult to make yourself, I also posted my brownies recipes on this blog (http://lolasreviews.com/lolas-kitchen-brownies-recipe/) in case you’re itnerested ;), although I do agree that sometimes a box is easier and a bit quicker too.
