Lola’s Kitchen: Hot Lightning recipe

I love cooking and spend some time in the kitchen almost every day, so I wanted to give it a place on my blog as well. The banner for this feature is designed by Michelle from Limabean Design.

Today I am going to share the recipe for Hot Lightning with you. The term might sound a bit weird, it’s the direct translation if the dutch recipe called “Hete Bliksem”. Basically it’s mashed potatoes with warm apples and it’s so yummy! I think it’s called Hot Lightning because of how you can burn your mouth on the hot apples. This recipe is based on the “Hete Bliksem” recipe from Albert Heijn.

Ingredients

Hot lightning ingredients

  • Potatoes – 1 kg / 6-7 medium potatoes
  • Apples – 4-6
  • Milk – 100 ml/ 0.4 cups
  • Butter (optional)
  • Cheese (optional)
  • Scallion (optional) – 3
  • Olive Oil

This recipe feeds about 4 people. I usually forget to buy spring onion and cheese, but it tastes great without those ingredients as well. You can throw some salt and peper through it if you want. I do like to add some butter and milk to my mashed potatoes, but I’ve seen mashed potatoes recipes with only milk or only butter as well, so just make the mashed potatoes however you want.

Method

  1. Pre-heat the oven on 200°C/ 400 degrees fahrenheit.
  2. Slice and dice the potatoes and cook them for 15 till 20 minutes.
  3. Slice and dice the appel, you don’t have to peel them, but if you prefer them peeled that works too. Place the apple pieces on a cookie sheet with greaseproof paper. Add some salt and peper (optional). Bake for 15 minutes.
  4. Drain the potatoes, then heat the milk and add it to the potatoes. Add the butter (optional). Mash them until almost no pieces remain and you have a creamy puree. Add salt and peper to taste and add the cheese and scallion (optional).
  5. Get the apples from the oven and carefully stir them through the mashed potatoes
  6. Your Hot Lightning is now ready to be eaten! Enjoy!

Variation Tips

  • Add cinnamon. Throw some cinnamon and sucker on top of the apple to give them a bit more taste.
  • Add vegetables. Now I personally don’t think it’s necessary to add any vegetables, but I think it might be worth a try. Cook the vegetables together with the potatoes and mash. You also add some corn and/or green peas to the mashed potatoes after mashing them.
  • Autumn Hot Lightning. Add a pumpkin, slice and dice it and heat it in the oven with the appels.

    • I directly translated the recipe name from dutch as I think it’s a funny name for this recipe and I hoped people would do a double take and check out the post. I think it had something to do with the apples pieces being hot and you can burn your mouth if you’re not carefull.
      Hope you will try this!

    • It might sounds a bit weird, but the apple is a great addition to the mashed potatoes. Hope you’ll decie to try it eventually 🙂
      And I just had to translate the dutch term for this recipe directly as I love the name for this recipe, it’s so weird.

  1. I’ll eat potatoes anyway I can get ’em: mashed, deep fried, baked, etc. This is a fun twist on a traditional recipe. I’ll forward the link to DH, and hopefully he’ll get the hint because this is well beyond my capabilities. Anything that requires more than 3 steps is for that matter, and even then… that’s pushing it.

    • Just like you I love potatoes in every form I can get them, I also love putting potatoes in my curries. After seeing the recipe in a magazine it’s been a favourite recipe of mine.

  2. I’ve never eaten this particular recipe, but I do remember eating mashed potatoes with apples. Or at least something that tasted of apples. When I was really young, I also remember reading a book where a character mixes his mashed potatoes and applesauce. 😀

    • Fun to hear you ate mashed potatoes with apples once, this is actually mashed potatoes with apples, but I directly translated the name from dutch as I thought it was fun. Mashed potatoes with applesauce sounds good too!

    • I am a bit weird and picky with food, but this combo totally works with me. I actually made a risotto with apples and corn a few times and it’s delicious as well. Actually I just love apples, so maybe that’s why. I hope you give it a try, would love to hear what you think of it!

    So for the cinnamon variation it would give a sweeter taster right? Definitely an interesting recipe.

    • I think this is the only traditional dutch recipe included so far as dutch food normally is very boring in my opinion, but I love this one! I think the cinnamon would give it a somewhat spicer taste, you can add some sugar to get it a bit sweeter as well. Haven’t tried it myself yet, but I want to try it once!

    • I made this for the first time when I couldn’t cook at all, but I had no trouble making this. It’s certainly easy to make and you can’t really do much wrong. Please let me know how it turned out when you try it :).

    • Hope you give it a go! Mashed potatoes with a twist is a great way to describe it, the apples really add soemthgin to the mashed potatoes.

  6. I’ve never even heard of Hot Lightning, Lola but I’m going to make it! I love apples in anything (although I’m definitely going to try it with pumpkin next fall because I love pumpkin too!) and as one of my kids is a very picky eater, this may get her to eat some apple.     • Yay! Hope you like it :). I love apples as well, especially warm apple. Just made apple crumble for the first time yesterday, yum! I never tried the pumkpin version myself, but it sounded like a good idea so I added it as variation tip. I have a risotto recipe coming up this week with a pumpkin variation tip as well. I like pumpkin although I hate slice and dicing them as don’t have any really sharp knifes that easily get through it.
