This recipe requires only 3 ingredient, it’s pretty easy to make and they taste really good. If you like bounties, you probably like these as well. I had bought a bag of shredded coconut and decided to try out some coconut recipes, chocolate covered coconut balls or homemade bounties were the recipes I saw most. I found two that looked good and kinda combined them to one recipe. I used to ball shapes form one and the ingredients from another recipe. I tweaked a few things while making them. I was a bit hesitant they might not turn out well, but they tasted really good. I just barely had enough chocolate, but without chocolate they taste good too, so I just kept it at that amount of chocolate. But if you want to cover all of them, you could use a bit more chocolate.

This recipe is based on Not Enough Cinnamon their Easy Homemade Bounty AKA mounds recipe and Sugar Apron their Chocolate Coconut Cream Truffles their recipe.

Ingredients

  • Shredded coconut – 3 cups/ 180 gram
  • Chocolate – about 2 cups/ 300 gram
  • Sweetened Condensed milk – 1 can/ 1/2 cup/ 397 gram

I always use 100 gram pure chocolate and 200 gram milk chocolate, but you can also go for all pure, or all milk or even white chocolate. Whatever you prefer. Or add a bit more if you want to cover all of them with chocolate. I usually have a few of them without chocolate, but those taste good too.

Method

  1. In a medium to large sized bowl combine the coconut and condensed milk. Mix with a spoon or your hands. Cover a plate with baking paper. then roll small balls of the filling with your hands and place them on the plate. Repeat until all the filling is gone.
  2. Place the plate(s) for one to two hours in the fridge.
  3. After those two hours break the chocolate into pieces and then heat for 30 seconds in the microwave, stir well and then put back another 20 seconds, repeat until the chocolate is molten.
  4. Get the plate with coconut filling balls from the fridge. Get another plate and cover that with baking paper as well. Then pick up a coconut ball, put it int he chocolate, cover it and then scoop it out with a fork. Let the excess chocolate drip off the fork and then put the ball on the new plate. Repeat until all balls are covered with chocolate.
  5. Put the chocolate covered coconut balls in the fridge and let it stay there for about an hour. After that you can eat them and put them in a bowl instead of the plate.

    • Coconut and chocolate is such a good combination :). I hadn’t even thought of it like that with how it’s free of gluten etc. I always mix one bar dark chocolate with milk chocolate as I prefer that, but yes you can eat this with any chocolate you like. let me know how they turn out if you make them!
