Lola’s Kitchen: Bean Mix with Bacon and Potatoes Recipe

This is another dish I made for my boyfriend. It’s based loosely on a dish his parent sometimes make. It has beans in it (in my version only one type of bean tough as else it was way too much), some paprika, corn and bacon and it’s served with potatoes. Although you can just as easily substitute it with rice or anything else.

Ingredients

  • Kidney beans – 1 can/ 1/2 cup
  • Corn – 1 can/ 1/2 cup
  • Bacon – 200-300 gram
  • Onion – 1
  • Red bell pepper – 1
  • Potatoes – 4
  • Tomato puree – 2 teaspoons
  • Bouillon cube – 1
  • Olive Oil

You can add other types of beans too. This recipes serves 2-3 people.

Method

  1. First preheat the oven to 180 degrees Celsius/ 356 degrees Fahrenheit. Then coat the bacon on both sides with some paprika powder, cayenne pepper and a bit of salt. We have thick pieces of bacon here that I used for this dish. Cut in smaller pieces if necessary so it’s easy to turn. Then put them in an oven proof bowl and put in the oven for about 30-60 minutes. Until it’s crispy on both sides. Turn around every 15 minutes
  2. Grate the potatoes and slice them in pieces. Then boil for 16 minutes.
  3. Then start on the bean sauce. Slice the onion in pieces and start baking until translucent.
  4. In the meantime slice the red bell pepper in small pieces and add to the wok once the onion is translucent.
  5. Drain the kidney beans and corn and rinse, then add to the wok with the onion and red bell pepper.
  6. Dissolve the bouillon cube in a bit of hot water and add to the wok along with the teaspoons of tomato puree. Let it all cook for a few minutes and then remove from the fire.
  7. Once the bacon is ready, slice it in smaller strips and add to the sauce. Serve with the potatoes.

    • I only slowly am getting into more beans, my favorite are edamame beans probably. I also have grown to like chickpeas, mostly when I make hummus of them tough or roasted chickpeas.
