I love apple and crumble and pecans, so this cake just seemed perfect for me. When I stumbled upon this recipe I immediately printed it and planned to make it that weekend. While the middle sank a bit due to the large amount of apples I added, it tastes great.
This recipe is based on Spicy Southern’s Kitchen Apple Crisp Coffee cake recipe
Ingredients
For the cake
- Flour – 2 cups/ 225 gram
- Sugar – 1 cup/ 22o gram
- Butter – 1/2 cup/ 1 stick/ 113 gram
- Eggs – 3
- Cinnamon – 1 teaspoon
- Vanilla extract – 1 teaspoon
- Baking powder – 1 teaspoon
- Baking soda – 1 teaspoon
- Salt – 1/2 teaspoon
For the middle layer
- Apples – 2 (or slightly less if using large apples)
- Pecans – 1 cup/ 115 gram
For the crumble
- Flour – 3/4 cup/ 93 gram
- Sugar – 6 tablespoons/ 75 gram
- Butter – 1/2 cup/ 1 stick/ 113 gram
- Cinnamon – 1/2 teaspoon
Method
- Before starting on the cake preheat your oven to 350 degree Fahrenheit/ 18o degrees Celsius. Prepare a baking pan around 9 by 13 inches with baking proof paper in it.
- First let’s make the crumble. Slice the butter in smaller pieces, then add the flour, sugar and cinnamon and mix with your hands till it has a fine crumbly texture. Set aside.
- Now let’s make the cake dough. Melt the butter and combine it with the sugar. Mix well.
- Then add the vanilla and eggs and mix till combined.
- Now add the flour, cinnamon, baking powder, baking soda and salt. Mix for a few minutes. Then set aside.
- The next step is to prepare the pecans and apple. For the pecans I like to break these into smaller pieces using my hand. then set aside.
- Peel, slice and dice the apple into small pieces. Now we have all our ingredients ready.
- First pour the batter into the baking pan. Then add the apples on top and press them lightly into the batter. Then sprinkle the pecans on top of that. And at last add the crumble mixture and spread evenly on the top.
- Now bake it for 40 to 45 minutes or until a cake tester comes out of it dry.
- Let it cool down a bit and then enjoy!
That looks and sounds delicious. Ken loves apples so I make an apple crisp for him when he brings apples home.
