Lola’s Kitchen: Oatmeal Sandwich Cookies Recipe

After seeing this recipe first on Herding Cats and Burning Soup I knew I had to make it. I hadn’t tried my hand at sandwich cookies yet and Anna loved these and make it sound so good. So I gave it a try and these cookies are so delicious. The cookies are filled with oats, pecan nuts and cinnamon flavour and then combined with the peanut butter filling, these are cookies where you can easily ate multiple after each other and still want more.
This recipe is based on the Oatmeal Sandwich Cookies recipe of Herding Cats and Burning Soup.
Oatmeal sandwich cookies

Ingredients

Ingredients Oatmeal sandwich cookies

  • Butter – 114 gram/ 1/2 cup/ 1 stick
  • Flour – 128 gram/ 1 cup
  • Oats – 125 gram/ 1 1/4 cup
  • Pecans – 100 gram/ 1 cup
  • Brown Sugar – 180 gram/ 1 cup
  • Egg – 1
  • Vanilla Extract – 1 teaspoon
  • Baking Powder and/or baking soda – 1 teaspoon in total
  • Cinnamon – 3 teaspoons
  • Nutmeg – 1 teaspoon
  • Salt – 1/2 teaspoon

Peanut Butter filling ingredients

  • Butter – 42 gram/ 3 tablespoons
  • Peanut Butter – 125 gram/ 1/2 cup
  • Powdered Suagr – 125 gram/ 1 cup
  • Water – 3-4 tablespoons

While the recipe calls for smooth peanut butter, I always make this with penaut butter with pieces of nuts and it still turns out great. You can subsitute the water for milk, but I prefer using water as then I don’t have to worry as much keeping it out of the fridge. And I don’t notice much difference in the taste. You cna half this recipe when you don’t want to cover all of the cookies. I usually half it and can still cover most cookies when I eat them with them seperate instead of as sandwhiches.

Method

  1. Preheat the oven to 200 degrees celcius/ 350 degrees fahrenheit.
  2. Mix the sugar and butter in a bowl, you can heat the butter for a few seconds in the microwave if you’re using a mixer, but you can also kneed the dough with your hands. Mix the butter and sugar until well combined.
  3. Add an egg and the vanilla extract to the butter and sugar mixture and mix well.
  4. In another bowl combine the oats, flour, baking powder and/or baking soda, cinnamon, nutmeg and salt.
  5. Then start combining the dry ingredient piece by piece with the wet ingredients until combined.
  6. At last add the pecan nuts and stir for a bit.
  7. Role small balls from the dough and place them on a baking sheet with parchment paper. It doesn’t really matter how big you make the cookies as long as they are all approximately the same size.
  8. Bake the cookies for about 13 minutes and then get them out of the oven and let them cool down.
  9. In the meantime get started on the peanut butter filling. In a small bowl combine the butter, peanut butter, powdered sugar and the water. Then stir well.
  10. Once the cookies are cooled down, scoop some peanut butter filling on a cookie and cover it with another cookie. Continue until all cookies are sandwiches. Or you can just put the peanut butter toping on oen side and eat the cookies like that.

Variation Tips

  • Oatmeal cookies. If you don’t want to make the filling, you can also eat these as normal oatmeal cookies as they taste great on their own as well.
  • Vary with fillings. I mentioned before that this is my first try at sandwich cookies, so I have no idea for other fillings, but I am sure there are countless of other fillings that would taste great with these cookies as well.

    • I made them last week, they are so yummy! Last time I just made the filling seperately and them when I wanted a cookie, I put it on it’s back and slathered some filling on it. It’s easier to eat than making them in sandwiches, especially as mine usually turn out a bit too round.

    • Mine too! I love peanut butter, my most recent creation was peanut butter risotto, which was pretty good! The peanut butter filling for these cookies is really yummy, you can also use it as topping for other cookies.

    • This was my first try at sandwich cookies and I still have some trouble making the cookies flat enough that they make good sandwiches, as you can see in the pictures. Sometimes I just slather the filling on the bottom of a cookie and eat it like that. If you love peanut butter, you will probably enjoy these cookies! I am a big peanut butter fan as well πŸ™‚

  1. Yum! I’ve not made sandwich cookies before…and that’s saying something. *ha* I make thumbprint cookies and typically use chocolate or currant jam as the filling. But I think I’ll give these cookies a whirl this week, Lola. I promised my kids I’d make them some cookies to take with them as they travel to my parents’ house.     • This were my first try at sandwich cookies. I actually prefer to make them with filling on one side, so there is mroe filling for each cookie. I’ve never make thumbprint cookies though, will have to give those a try soon!
