One day on Pinterest I stumbled upon a recipe for banana snickerdoodles and I was immediately sold on the idea. This sounded like a great combination of flavors, I still had some banana’s lying around and later that week I gave them a try. They turned out delicious. If like like banana and snickerdoodles I definitely recommend these. They have a strong banana flavor and the cinnamon coating really adds to the flavor.

Ingredients

For the cookies

  • Banana’s – 2
  • Flour – 375 gram/ 3 cups
  • Sugar – 1 cup/ 200 gram
  • Butter – 226 gram/ 1 cup/ 2 sticks
  • Cinnamon – 2 teaspoons
  • Vanilla extract – 2 teaspoons
  • Salt – 1/2 teaspoon
  • Baking powder – 1/2 teaspoon
  • Baking soda – 1 teaspoon

Use (over)ripe banana’s for these if possible.

For the coating

  • Cinnamon – 1 1/2 teaspoon
  • Sugar – 50 gram/ 1/4 cup

Method

  1. Preheat the oven to 350 degrees Fahrenheit/ 180 degrees Celsius.
  2. First melt the butter for 30 seconds in the microwave. Combine the butter with the sugar in a big bowl. Mix until fluffy and well combined.
  3. Then mash the banana’s with a fork. Add the banana mash and vanilla extract and mix for another minute or so.
  4. Add the dry ingredients, flour, salt, cinnamon, baking soda, baking powder and mix until well combined.
  5. Put the dough in the fridge for a little while, as long as 10 minutes works, but if you have more time you can leave it in longer.
  6. Now prepare the coating. Mix the cinnamon with the sugar.
  7. Get the dough out of the fridge and roll balls form the dough, then roll them through the coating and place on a baking sheet lined with baking paper. I made four rows of four. Then bake for about 10 minutes. Repeat until all cookies are baked.
  8. Let the cookies cool down for a bit and then you can eat them.
