Lola’s Kitchen: Apple Pie Dough Cookies Recipe

I love apple pie, everything from the yummy dough to the sweet apple filling. One day while my sister was making apple pie I mentioned how much I liked apple pie dough, not sure why, but I think it always tastes great. So I mentioned I would like cookies made form that dough. My sister kept a bit of the dough separate and made a cookie form it. Ever since then once I want apple pie dough I simply make the dough and instead of making pie with it, I make cookies with it. Basically it’s the dough I use for my apple pie recipe, but then shaped like cookies. yum!

Ingredients

  • Flour – 300 gram/ 2 2/5 cup
  • Butter – 200 gram/ 1.8 sticks of butter/ 0.8 cup
  • Light Brown Sugar – 150 gram/ 1/2 cup and 2 tablespoons
  • Egg – 1
  • Baking Powder – 1 teaspoon
  • Salt – a pinch

Method

  1. In a big bowl combine the flour, baking powder, light brown sugar and the butter (cut into small cubes). Mix until it’s well combined and a bit of a crumbly mixture. Then in a small bowl break the egg and add 3/4 of the egg or about 35 gram to the dough. Mix with your hands till it’s a soft dough. Roll into a ball and put it in the fridge for half and hour till an hour.
  2. Once the dough has chilled long enough return to the kitchen and heat up the oven to 175 degrees Celsius/ 350 degrees Fahrenheit. Remove the dough from the fridge. Tear small pieces of dough from it and roll small balls of them. Place them on a plate covered with baking paper. And continue until the plate is filled. keep some space between the cookies so they can rise.
  3. Bake the cookies for about 10 minutes or until golden brown. Remove them from the oven and let cool down on the plate first and then move them to a wire rack. Repeat the process until all cookies are baked.

Variation Tips

  • Apple pie dough Cookies with Pecan nuts. Break about 100 gram of pecan nuts into tiny pieces and mix into the dough.

  • Apple pie dough cookies with cinnamon. Add some cinnamon to the dough and mix well.
  • Apple pie dough strips with butter and cinnamon sugar. Thanks to Angela for this tip, she mentioned she sometimes made pie dough and rolled it thin added some melted butter on top with cinnamon, sugar and nutmeg. Then bake for about 10-20 minutes or until crispy. I haven’t tried it myself yet, but it sounds delicious.

    • Thanks! It was was just a random thought that turned into this recipe. It’s great for when you want some cookies or pie dough, but don’t want to make the whole pie. It probably works for other pie dough recipes as well.

    • Yes this was just a random thought that turned into a great recipe. I don’t think I even have a chocolate chip cookie recipe, although I do add chocolate to a lot of cookies.
